RECIPE: Salmon and Quinoa Salad

Whether Steelhead, Coho, or Sockeye,

Quinoa (“keen-wah”) is a healthy grain,

It’s good for your waistline and packed with protein!

Salmon Quinoa Salad

Let’s keep this simple:

Grill, bake or buy a cooked piece of salmon or wild fish or humanely-treated meat of your choice.

Add 1 cup Quinoa to 2 cups boiling water, add a bouillon cube or spices of your choice (thyme, sea salt, ground pepper, basil) cook on medium-low heat x ~ 10 minutes, until water is gone.

Cover dinner plate with arugula (or green of your choice)

Scoop out desired amount of cooked quinoa and place atop arugula.

Place deliciously prepared (or purchased) fish atop quinoa

Drizzle with lemon, basaltic vinegar and olive oil or your favorite dressing, if you prefer.

*I don’t know a scientific study based on greens’ impact specifically to the spleen, however every organ and cell is likely to benefit from nutrient dense foods like leafy greens.

RECIPE: COCONUT SUPERFOOD SMOOTHIE

This smoothie is your new best friend. Its superfood contents jam in the vitamins and nutrients your body craves.

It blasts sugar cravings and will jostle your body back to health. Its power-packed protein will ramp up your metabolism and keep you satisfied!

Sure, it has more ingredients than I like to deal with, especially in the morning, but it’s easier than making eggs and it keeps me full longer!

Recipe makes 2 full servings, so I make one each morning then I’ll pour half in a jar and save it the fridge for later. Sometimes I’ll share 1/2 with my husband and/or 9 month old.  This is definitely our family’s new, “go to” breakfast smoothie!

COCONUT Superfood Smoothie

In a Blender Combine:
1/2 cup coconut milk
1/2-1 cup filtered water (more if you want to pour it, less if your going for Ice Creamy)
1 banana, peeled
3-4 cubes ice
2 Tbsp:
Coconut (unsweetened)
Pumpkin seeds
Chia seeds
Hemp hearts (optional)
Pecans
1 Tbsp:
Coconut oil
1 tsp:
Cinnamon
Maca Powder (optional)
 Oh and by the way, if you have a serious ice cream obsession, this beast will blast those sweet, cold, creamy cravings for sure!

And If you’re one of those weirdos who don’t like coconut… just go. We don’t want you here.

RECIPE: Cocoa Nib Banana Pops

Simple, stylish, satisfying dessert. These frozen treats will curb any ice cream inkling!

Healthy enough to have as a snack. Fewer grams a sugar than a LaraBar and full of flavor!

YOU WILL NEED:

2 bananas

~ 1/2 cup almond butter

~ 1/2 cup cocoa nibs (could use chocolate chips if you are feeling naughty or coco powder with a dash of cayenne if you’re feeling spicy)

flat wooden skewers or popsicle sticks

piece of parchment paper

small flat bowl or plate

knife for spreading nut butter

a freezer or fridge

Peel 2 bananas and break in half.

Stab flat end of bananas with sticks

Quickly* Smear nut butter around each banana (does not have to be uniform)

Quickly* Roll each banana in cocoa nibs (does not need to be uniform)

Place on parchment paper and place in freezer for 10-15 minutes.

Store in fridge or freezer depending on how cool you are (or your texture preference.)

*If you get too in to the smearing and rolling, your banana will fall off the stick

RECIPE: Greens & Beans Salad

Need a protein-packed, vivacious, vitamin-rich, super-easy salad?

Have I got the one for you! In less time than it takes you to remove your eye make-up, you can whip up this healthy dish!

INGREDIENTS:

4 cups organic mixed greens, spinach and arugula (or greens of your choice)

1 avocado, diced

1 can organic garbanzo beans, rinsed and strained

1 can organic black beans,  rinsed and strained

1/4 red onion, diced (optional)

1/4 cup pumpkin seeds or sunflower seeds (optional)

Combine all of the above together and then drizzle with your favorite dressing. Or try this delish dressing

Put a bird on it (egg or chicken), or roll it in a wrap.

Make a large bowl to scoop from all week!
