RECIPE: Unbelievably Good Arugula, Citrus and Avocado Salad

I served this salad to dinner guests this past Friday night and turned around and made it again to party of 12 the following night.  It’s THAT good (and as always, oh so easy and healthy).  It is a variation of the yummy Barre3 online recipe— I highly recommend you check their stuff out! SALAD INGREDIENTS:
2 cups fresh arugula

OR

2 cups fresh spinach
1 orange (navel or blood); rind removed and fruit sliced into discs
1 avocado; sliced or cubed
1-2 roast beets  or 1 raw beet shredded [optional, but do it!]
2 Tbsp sunflower seeds (I went the extra mile and toasted them) [optional, but add ’em]

recall the Ridiculously good DRESSING INGREDIENTS from a previous blog post:
Juice from 1 lemon
1 teaspoon Dijon mustard
1/4 cup olive oil
1/8 cup apple cider vinegar
Salt to taste
Pepper to taste

She has participated with Operation Smile in Russia, she has patients in North Carolina, Maine, Oregon and New Zealand. Dr. Vanstory has worked the medical tents in the Marine Corps marathon in Washington DC and at the Kona Ironman World Championships. And Dr. Vanstory has marched with the Surgeon General promoting "Exercise is Medicine" at the World Congress Sports Medicine Conference. Disillusioned by the current health care system and armed with the realization that culture, nutrition and emotional well-being have a profound impact on health, Dr. Vanstory now motivates clients and patients to discover the healthiest versions of themselves through humor, counseling in her "Upgrade Your Health" Wellness Program.

  1. This salad is super flavorful. I used juicy clementines instead of oranges and kept all the ingredients separate so my family could build their salad to taste. The kids loved the beets sautéed with a little sugar!
